Copycat Nut Butter Filled Cliff Bars

Hello! I hope you are all having an amazing holiday season. My fiance and I are blessed to have big families that are all near by. We have spent the past two days bouncing around from family to family and deciding which of us got to take the dog to our parents for Christmas morning. I have had so much fun celebrating with everyone. I hope you are all finding joy, love and happiness this season.

Today, I want to share with you a copy cat recipe for Nut Butter Filled Cliff Bars. I try not to buy bars for snacks to often because they can be expensive. They can also have a lot of added sugar and funky ingredients. At one of my recent road races they were giving away samples of Nut Butter Filled Cliff Bars. I loved them a lot and they do not have any funky ingredients. But, buying bars can get expensive, so I wanted to make my own at home.

I decided to recreate the coconut almond butter ones first.

First, I pulsed dates,  almond butter, shredded coconut, and oats in a food processor until a ball forms. Then I made a filling with almond butter and rice flour.

Next, I formed bars around the almond butter filling.

I love having healthy snacks on hand. I snack a lot and it is easy to stay healthy when I have wholesome snacks on hand. These will be a perfect treat for snacking on this week as I try and resume normal eating habits again after many heavy and delicious holiday meals and many, many, cookies. I hope you enjoy them. Copycat Nut Butter Filled Coconut Almond Butter Cliff Bars

Ingredients
Coconut almond butter bars
  • 3 dates
  • 3 tbsp almond butter
  • 3 tbsp unsweetened shredded coconut
  • 3 tbsp quick oats
Filling
  • 1 tbsp almond butter
  • 1 tbsp brown rice flour

Coconut almond butter bars
  • 3 dates
  • 3 tbsp almond butter
  • 3 tbsp unsweetened shredded coconut
  • 3 tbsp quick oats
Filling
  • 1 tbsp almond butter
  • 1 tbsp brown rice flour
Instructions
  1. Pulse the dates, three tablespoons of almond butter, coconut, and oats in a food processor until a ball forms.
  2. In a small bowl combine the 1 tbsp almond butter and rice flour until smooth and firm.
  3. Divide the date mixture into 3 equal parts. Flatten each part into two equally sized rectangles. Place 2 tsp of the almond butter mixture on top of one of the rectangles. Cover the rectangle and almond butter with the other rectangle of the date mixture. Pinch the edges together so that the almond butter is secured inside. Repeat with the other to parts of the date mixture.
