Chocolate Hazelnut Date Balls

I am back! Sorry for the hiatus. I was without my computer for a while. My keyboard is broken and I dropped it off to get fixed. Then the part was back ordered. I was finally able to pick it up while I wait for the part. For now I have to use a wireless keyboard for my laptop. I am hoping the part gets in soon.

In the mean time, I have been working on some recipes for for. These Chocolate Hazelnut Date Balls were inspired after I made some homemade hazelnut milk. I used the recipe from Run Fast. Eat Slow but there are plenty to be found on the web like this one. Once you make the milk you have leftover pulp. I didn’t want mine to go to waste so I dried mine out in the oven. I heated it to 290 degrees Fahrenheit and let it dry out for a couple hours, stirring and checking it every half an hour. Then I decided to use it to make these Chocolate Hazelnut Date Balls

The first time I made this recipe I used the leftover pulp. The second time I made it I simply ground whole hazelnuts in my food processor. Both ways were good.

I rolled some of the date balls in extra ground hazelnuts.

Others I rolled in cacao powder.

These make great snacks when you need a quick bite to tied you over. I also liked them as a little something to put in my stomach before my morning runs.

These would make a great addition to a holiday cookie platter.

Chocolate Hazelnut Date Balls

Ingredients
  • 10 dates softened in hot water
  • 1 cup ground hazelnuts, roasted or raw or leftover ground hazel nuts from making hazelnut milk, dried in the oven
  • 1/4 cup unsweetend cacao powder or cocoa powder
  • 1 tbsp maple syrup (or honey if not virgin) or more to taste
  • pinch sea salt

  • 10 dates softened in hot water
  • 1 cup ground hazelnuts, roasted or raw or leftover ground hazel nuts from making hazelnut milk, dried in the oven
  • 1/4 cup unsweetend cacao powder or cocoa powder
  • 1 tbsp maple syrup (or honey if not virgin) or more to taste
  • pinch sea salt

Instructions
  1. First, soften your dates in hot water for about 10 minutes. Then drain.
  2. If using whole hazelnuts, pulse them in a food processor until a course meal forms and measure out 1 cup.
  3. Add dates, ground hazelnuts, cacao powder, maple syrup, and salt to the food processor. Process until the ingredients are combined and a ball forms.
  4. Roll into balls slightly smaller than a golf ball.
  5. If desired, roll in additional ground hazelnuts or cacao powder.
  6. Store in the fridge for about a week or in the freezer for several months.
