Hello!!!! Sorry it has been so long since I have posted. Life has been busy and I have been waiting for inspiration to hit. I started making this Chocolate Chip Oatmeal Cookie Oatmeal (is that name too redundant? I could not decide) a few weeks ago and I became obsessed with it. For two weeks, I ate this for breakfast 4-5 days a week and will definitely be making a regular appearance in the oatmeal rotation. This Chocolate Chip Oatmeal Cookie Oatmeal is super easy to make. This Chocolate Chip Oatmeal Cookie Oatmeal is a healthy balanced breakfast. Or, you could whip it up for a healthy dessert or snack.
This Chocolate Chip Oatmeal Cookie Oatmeal is so good. It is sweetened with a banana and made creamy with cashew butter. The cashew butter along with the chia seeds add some protein. The cacao nibs add antioxidants and a nice crunch. The chia and granola also add some nice texture. Chia seeds are also pack a punch of omega 3’s. These superfoods combine into a decadent breakfast.
So remember, a while ago, when I mentioned I was getting an itch to train for something again? Well, I signed up for two triathlons. Eek! The first one is a sprint tri this weekend and my goal is just to finish. In August, I am signed up for an Olympic distance. I may not have realized how long it would take me to finish this when I signed up. Each leg seems doable but all strung together I would be super happy with a time of 3:45 but will probably just aim for under 4 hours, but again my primary goal will just be to finish. I always reevaluate my goal time right before the race to be realistic based off my training. Does anyone have any tips for completing my first tri?
This Chocolate Chip Oatmeal Cookie Oatmeal would be great fuel for training or for just a healthy morning meal. Or really anytime of day. It also goes great with a cup of coffee or black tea.
