Hello friends! Are you ready for spring?! I am but for now it is cold and dreary here. This Apple Pie Smoothie was inspired by two desires. I wanted a smoothie but not a cold one in the cold months. So this smoothie can be drunk hot or cold. The second inspiration was the fact that I know some people don’t like the texture of oats. I hope blending them into a smoothie makes them more palatable for these people.
This smoothie is warm, cozy, creamy and delicious. It is also gluten free, dairy free and vegan making it perfect for just about everyone. Better yet, it is quick and easy to make.
The night before you want this Apple Pie Smoothie, place the oats, water and cashews in a blender and place in the refrigerator to soak overnight. In the morning add the apple, cinnamon and nutmeg and blend. You can drink cold or warm it up on a cold morning. To warm it up, place in a pot on the stove over medium-warm heat for 5-10 minutes or place in microwave for about 1 minute and 15 seconds.
The oats make this smoothie think and creamy. The cashews add healthy fat and protein. This combination of makes a yummy, balanced and filling breakfast. Let me know if you try this and what you think. I hope it is warm where you are.
